TORONTO, June 18 (Reuters) - Canadian stocks rose on Monday, climbing with gold mining and defensive shares as investors remained nervous about the euro zone's lingering debt crisis, despite a weekend victory for pro-bailout parties in Greece. The Toronto Stock Exchange's S&P/TSX composite index unofficially closed up 76.23 points, or 0.7 percent, at 11,601.13.
