Ancient Secrets of Artisan Gelato Unveiled at Gelato University

Who knows the ancient secrets to producing artisan gelato? Find the answers at any of 11 worldwide campuses of Carpigiani’s Gelato University. Whether online or in person, gelato maestros at Gelato University take you back 14,000 years in the study of why artisan gelato tastes so incredible while having less fat, less air and smoother ice crystals than traditional ice cream. Now with the help of Gelato University, you can turn that knowledge into an amazing career in four weeks.

Gelato University is not only for those with a culinary background. “We have all sorts of success stories here at Gelato University. People come here from all sorts of backgrounds to re-direct their careers into something more meaningful,” states Kaori Ito, Director of Carpigiani University, Bologna, Italy. During filming of Gelatology: A Film About The Art, Passion, Science and Business of Gelato, four very interesting characters were interviewed: a chiropractor who is the medical director of the world surfing tour, an accounting couple from Tokyo, a food truck operator from San Francisco and a young Italian who is moving to Singapore to open a gelato shop there (film and stills available).

To kick off the Gelato World Tour 2.0, there will be a special one day crash course called GELATO UNIVERSITY FOR MEDIA PROFESSIONALS in the Los Angeles area, February 24th, 10:00am-5:00pm at the SoCal Gas Company Training Center and Test Kitchen in Downey, California. By the end of the day, participants will be making their very own recipes of artisan gelato. This free course (made possible by the Gelato World Tour 2.0) will be helpful to any foodie journalist. For others interested, Gelato University North America is located in Winston Salem, North Carolina, at the Ali Group Training Center, a place where culinary experts can learn about everything from food preparation and handling to managing food waste.

Gelato artisans from around the world are honing their recipes to compete for the title of “World’s Best Gelato” in the Gelato World Tour 2.0 competition. The tour hits Singapore this March and Tokyo in September. After a successful and emotional stop in Austin last Spring where 16 of the best gelato artisans in North America competed, Gelato World Tour 2.0 will host an unprecedented two stops in the U.S. in 2016. According to Achille Sasolli, director of the Gelato World Tour, “North America is the next frontier for gelato. It’s the largest untapped market in the world for artisan gelato and our hope is to help spread the culture here.” The cities under consideration include New York, Las Vegas, Los Angeles and Chicago. Following North America, the tour will have one stop in South America, return to Europe and continue until the finals in Italy in September 2017.

The first Gelato World Tour international competition, which finished in September 2014, covered 5 continents, spreading the culture of artisan gelato. The numbers: 700,000 consumers visited the events, over 43,000 kg of gelato were produced, 360,000 cups and 576,000 mini cones were served, international media outlets attended and generated advertising value of more than € 7 million.

The Gelato World Tour 2.0, supported by the Italian Ministry of Foreign Affairs and the Ministry of Economic Development, is directed by Carpigiani Gelato University, along with Sigep - Rimini Fiera, host of the most important exhibition in the field of traditional gelato and confectionery for the past thirty-six years. Continuing their support of this tour is IFI, an international leader in the manufacturing of display cases for gelaterias. New to Gelato World Tour 2.0, Prodea Group joins as operating partner addressing both the operational management of the tour and international sponsor coordination. Global specialty dessert ingredient company PreGel also joins the Gelato World Tour as a main partner. PreGel is the largest manufacturer and distributor of ingredients for gelato, sorbetto, frozen yogurt and more.
