Bend, Oregon – MAL Knives based in Bend, Oregon recently concluded a research exercise that revealed electric knife sharpeners could damage knives in a couple of different ways. They allow sharpening at one particular angle only.   As a result, an electric sharpener must start by re-profiling the blade, a process which removes a great deal of metal. Secondly, because electric knife sharpeners utilize spinning discs, they create heat which can damage the temper of the steel along the knife’s edge causing it to become weaker.

Jason Gshwandtner from MAL Knives says, “Systems such as Apex made by Edge Pro Inc. uses sharpening stones. As such, the individual sharpening maintains the angle the blade naturally has. A quick look at the MAL Knives comparison guide enables blade owners to find appropriate sharpeners for each type of blade.”

He also says, “After testing over a dozen sharpeners on a wide selection of knives, including some common kitchen knives, it became clear that the Apex system made by Edge Pro Inc. ranks as the top knife sharpener on the market today. This is because it uses a system based on sharpening stones, giving the consumer the flexibility to sharpen through a wide range of bevel angles and not damage their blades.”

He adds that, “it is incredibly frustrating to use dull knives and it is also dangerous because a dull knife tends to change direction and bounce as you make cuts. With my countless hours of researching and testing numerous blade sharpeners, I have found out two things. First the Apex system works with diverse blade angles as well as just about any knife. Second, it will not damage the steel temper by becoming too hot like many electric models do”. Jason also says, “Both these traits remain critical when it comes to knife sharpening and in extending blade usage into the future.”

There are some pros and cons associated with using this blade sharpener, just as there is many electric and manual models. Pros include its ability to work with a wide variety of knives and blade angles as without impacting the temper of the steel.  The cons rest in its manual operation and that you need some practice before you can use it effectively.
