Bend, Oregon – MAL Knives based in Bend, Oregon recently concluded a research exercise that revealed electric knife sharpeners could damage knives in a couple of different ways. They allow sharpening at one particular angle only. As a result, an electric sharpener must start by re-profiling the blade, a process which removes a great deal of metal. Secondly, because electric knife sharpeners utilize spinning discs, they create heat which can damage the temper of the steel along the knife’s edge causing it to become weaker.

There are some pros and cons associated with using this blade sharpener, just as there is many electric and manual models. Pros include its ability to work with a wide variety of knives and blade angles as without impacting the temper of the steel. The cons rest in its manual operation and that you need some practice before you can use it effectively.
