Seth Tibbott founded Turtle Island Foods in 1980 and spent over a decade scraping by selling homemade tempeh. But in 1995, he and a friend teamed up to create the Tofurky, a stuffed tofu loaf that went on to become a vegetarian Thanksgiving staple that's sold more than 5 million units.
