The restaurant welcomes Chef Dillon Tafoya to lead its premier sushi program, expanding the formidable Roth’s culinary program. A Colorado Springs native with over a decade of sushi expertise, Chef Tafoya brings a distinctive style and philosophy centered on balance, precision and respect that honors traditional Japanese technique while incorporating his Colorado roots and regional influences gained from working across both Colorado and Maine.

At the helm of the culinary team is Chef Ricky Biswas, whose Michelin-starred background and approach informs every detail of the menu, designed to elevate the shared dining experience. Roth’s Sea & Steak combines the best that the region has to offer with world-class culinary technique to showcase locally sourced ingredients in every dish and highlight the duality between land and sea. While every selection from the Roth’s menu is signature, dishes include: the A5 Japanese Wagyu Rib Cap from Miyazaki Prefecture, celebrated for its luxurious marbling and rich umami depth. Also on the menu is a 45-day in-house dry-aged Wagyu Ribeye, locally sourced and packed with intense flavor, and a Whole Roasted Turbot with a carved tableside presentation. For those seeking a true culinary journey, Roth’s offers an Omakase experience, an artful progression of sushi courses crafted in collaboration with Chef Dillon Tafoya and designed as a sushi lover’s ultimate indulgence. The beverage program at Roth’s Sea & Steak matches the culinary offerings with equal artistry and intention, featuring an innovative cocktail menu and curated wine selection. Signature offerings from the cocktail menu include: Old Friends, a tableside smoke-show reminiscent of a fireside chat complete with cognac and cigars featuring peated scotch, cognac, coffee-infused sweet vermouth and bitters, presented with smoke and coffee beans from Loyal, a local Colorado Springs roastery; White Top Cadillac, a refined interpretation and strikingly clear take on a classic margarita that layers Grand Marnier foam atop a clarified margarita base with habanero and black lime salt rimming the glass for a silky, refreshing and stunning presentation; Penelope at the Shore, a visually dynamic cocktail made with butterfly pea blossom vodka, Greek forest liqueur made from sacred mastiha trees on the island of Chios, blanc vermouth, and Mediterranean tonic that transforms from deep purple to striking pink at the table through the natural acidity of the tonic mixture.

General Manager Jeroen Erens, whose Michelin-caliber experience and time as Export Director for Austria’s Domäne Wachau brings rare depth to the wine program with a special focus on family-owned estates and small producers who prioritize respect for the environment. The centerpiece of the wine program is Roth’s Cellar Selection Wine No. 1: Founder's Cut, a collaboration between General Manager Erens and Gagnon-Kennedy Vineyards, a Napa Valley estate rooted in the region’s earliest viticultural traditions. This 2023 Cabernet Sauvignon-based blend was custom-crafted and aged exclusively in a single barrel made just for Roth’s, drawing from historic vineyard sites deliberately chosen by Napa’s earliest settlers for their exceptional terroir with some planted as early as the late 1800s. Founder’s Cut reflects both Napa’s timeless legacy and the intentional vision behind Roth’s: a rich, singular expression of heritage and excellence in every pour, marking a poised beginning to an exclusive wine series.
