To inspire you to stay fueled on hectic days, Thiessen is sharing this easy, on-the-go recipe for Chicken Salad Parfait, which can be made in 15 minutes or less and packs a nutritional punch, offering 20 grams of protein, 3 grams of fiber, along with significant amounts of calcium, iron and potassium.

Ingredients:

• 1 pouch (2.6 ounce) StarKist Premium White Chicken

• 1/2 cup cooked orzo

• 1/4 cup thinly sliced red onion

• 1/2 orange bell pepper, diced

• 1 tablespoon extra virgin olive oil

• 1/2 lemon, juiced

• 1/4 teaspoon black pepper

• 2 cups arugula

• 1 tablespoon shaved Parmesan cheese

Directions:

1. Place cooked orzo in a 12-16-ounce glass jar.

2. Add a layer of red onions, followed by the orange pepper. Drizzle lemon juice and olive oil over top. Sprinkle with black pepper.

3. Open the chicken pouch and add on top of the vegetables. Place arugula on top of the chicken and finish with the shaved parmesan cheese.

4. Seal and place in the refrigerator until you are ready to enjoy.
