NYT Recommends Applying John Boos Oil to Wooden Spoons

Wirecutter, by The New York Times, recently highlighted the benefits of using John Boos Mystery Oil to care for wooden spoons. Maki Yazawa emphasized their charm and practicality but noted that proper care, like applying the oil, is essential to keeping them in great shape.

-- Wirecutter is a product review website founded in 2011 and now owned and operated by the New York Times. Earlier this month, a NYT/Wirecutter headline advised readers that “Your Wooden Kitchen Spoons Are Probably Worn Out. It’s Time to Revive Them.” The article was written by Maki Yazawa, whose main focus is on making cooking fun.

In her review, Ms. Yazawa pointed out key virtues of wooden spoons - they are not degraded by acidic ingredients, such as tomatoes for instance; nor will they scratch delicate surfaces such as ceramic countertops. She goes on to explain, “wooden spoons are particularly finicky - they’re incompatible with dishwashers, prone to warp when exposed to high temperatures, and liable to get especially grimy if you don’t properly take care of them. But keeping wood spoons in good condition does require a bit of time and attention, she advises.

The January Wirecutter piece recommends immediately washing away any food residue left on any wooden spoon, using a sturdy sponge, hot water and unscented soap. It goes on to recommend that home cooks apply Boos Block Mystery Oil to wood spoons as soon as they begin looking dry, after allowing the wood to dry for several hours after washing, or overnight.

Boos Mystery Oil is a proprietary blend of white mineral oil, carnauba wax and beeswax that’s designed to hydrate wood and prevent it from splintering or cracking. It’s formulated and sold by John Boos & Company, headquartered in Effingham, IL. The process involves applying oil and rubbing it on the entire surface using a paper or cloth towel, then removing any excess oil.

In a November, 2024 Wirecutter article titled “How to Clean and Care for Wood Cutting Boards,” Ms. Yazawa touted another John Boos & Co. product to protect and preserve wood: Boos Block Board Cream. It’s a special blend of natural beeswax and mineral oil designed to lock moisture into wood cutting boards and countertops.

Wirecutter instructs homemakers to apply a dime-sized dollop of cream and to use a cloth or paper towel to spread the beeswax in a thin, even layer across the surface of the cutting board, chopping block or countertop, and allowing it to soak in overnight before wiping away any excess cream that remains. The article suggests that such proactive care can extend the useful life of wood products for many years.
