Each course reflects the classical French canon — refined through Chef Rosov’s modern lens and plated with artistic precision. The wine pairings have been hand-selected to transport guests through the vineyards of Burgundy, Bordeaux, and Provence.

1. Amuse-Bouche: Foie Gras Torchon with Sauternes Gelée & Brioche Crisp

Silky foie gras with hints of Armagnac, served alongside a whisper of Sauternes reduction.
Wine Pairing: Château Suduiraut Sauternes (France) — honeyed apricot and botrytis complexity match the foie’s richness.

2. First Course: Dover Sole Meunière with Lemon-Caper Beurre Noisette
