This exclusive five-course tasting unites the aromatic allure of European truffles with the soulful depth of Spain’s most distinguished red wines.

Designed for discerning guests of Palm Beach’s luxury estates and yachts, this limited-edition menu is available through February 2026 for private dining engagements of 2–12 guests.

“Truffles and great Spanish wines share a natural affinity,” says Chef Rosov. “They both speak of the earth — rich, expressive, layered with history. This menu was created to tell that story through texture, aroma, and balance.”

THE FIVE-COURSE AUTUMN TASTING MENU

Each experience begins with a presentation of fresh Alba white and Périgord black truffles, hand-shaved tableside by Chef Rosov, followed by a guided progression of Spanish pairings curated to enhance the truffles’ natural perfume.

  1. Amuse-Bouche: Truffle Arancini with Pecorino Cream

Crisp golden risotto spheres infused with black truffle essence and aged Pecorino.
Wine Pairing: Pazo de Señorans Albariño, Rías Baixas (Spain) — bright citrus and saline minerality lift the truffle’s richness.

  1. First Course: Porcini Risotto with Shaved Alba White Truffle

A luxurious expression of umami — creamy carnaroli rice enriched with Parmigiano-Reggiano and delicate white truffle ribbons.
Wine Pairing: Marqués de Murrieta Castillo Ygay Gran Reserva, Rioja (Spain) — aged elegance and spice harmonize beautifully with porcini depth.

  1. Second Course: Iberico Pork Tenderloin with Black Truffle Jus & Celery Purée

Tender acorn-fed Iberico pork glazed in black truffle jus, served with a velvety celery root purée.
Wine Pairing: Vega Sicilia “Valbuena 5º”, Ribera del Duero (Spain) — bold, structured, and expressive with notes of leather, fig, and balsamic.

  1. Cheese Course: Manchego Soufflé with Fig Jam & Rosemary Honey

A savory-sweet interlude pairing the nuttiness of aged Manchego with floral honey and fig compote.

The Experience

Guests are invited to enhance the evening with optional sommelier-led wine education, bespoke table styling, or live Spanish guitar accompaniment. Chef Rosov and his private culinary team handle all on-site preparation, plating, and service — transforming private villas and yachts into Michelin-level dining rooms.

This limited autumn–winter menu will be available by reservation only through February 2026.
