Ingredients

  • 1 (1.5-2lb) pork tenderloin
  • 2 Tbsp honey
  • 2 Tbsp butter, melted
  • 1 packet fajita seasoning
  • 2 Tbsp vegetable oil
  • 1 1/2 cups fresh, frozen or canned corn niblets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sweet onions, diced
  • 1/4 cup minced cilantro

 

Directions

  1. Heat oven to 200ºF.
  2. Prepare tenderloin by slicing in half, into 2 equal pieces. Place in a large pan.
  3. In a small bowl, whisk together 1 tbsp honey and butter. Brush all over pork tenderloin. Rub with fajita seasoning.
  4. Heat oil over medium-high heat in a GoodCook ProEase pan. Sear all sides, turning with tongs until each side is browned.
  5. Place the skillet into the oven and roast the meat for 10 minutes or until the required internal temperature of 63 – 66ºF.
  6. Transfer to a wooden cutting board and allow to sit for 10-15 minutes before slicing.
  7. Toss together corn, tomatoes, sweet onions, cilantro, 1 Tbsp honey. Salt and pepper generously. Serve atop sliced pork and enjoy!
